Dhonkeyo Kaju (Banana Kaju)



Ingredients:
4 ripe Bananas
3 eggs
1cup sugar
1cup flour
1tsp baking powder
1/2cup grated coconut
1tsp vanilla essence 

Method:
Crush banana & sugar until sugar dissolves. Add eggs mix well. Add flour little by little mixing well after each addition now add coconut, baking powder and vanilla essence.




Heat oil to 240F (if you have a candy thermometer) otherwise keep the oil in low heat. Using a bowl spoon scoop small amount of batter into the oil. 

Fry each side golden brown or when one side is done you can see small bubbles on the kaju's turn to other side (when you see these bubbles on the kaju's that means inside the kaju is cooked properly).  


Drain on kitchen paper and serve.......................................................................enjoy!
