Lettuce Mashuni (Lettuce Canned Tuna Salad)
Mashuni is a very popular salad Maldivians eat with roshi(
Maldivian flat bread) for breakfast. There are many varieties of Mashuni, like dried
or smoked fish mashuni, potato mashuni, eggplant mashuni, carrot mashuni, and
so on. The main ingredients for mashuni is shredded coconut, fish, lime and
chilly. Those who visit Male’ it’s very easy to taste this dish as almost all restaurants
in Male’ serve Maldivian breakfast and If you want to make mashuni at home and
you don’t have a coconut scrapper don’t worry I found out that shredded coconut
is sold at felivaru fish shops. It’s frozen to maintain it’s freshness. I bought 3
packets and tested it. It’s very fresh. So the biggest problem is solved. In this
recipe I have used lettuce for a much healthier version.

Ingredients:
1 big onion ( thinly sliced)
1 fresh chilly ( chopped )
3 curry leaves (chopped)
11/2 tbs lime juice
1tsp salt
1/3 cup shredded coconut
1 can tuna (oil or water drained)
5 big lettuce leaves (chopped)
Method:
1_ In to a bowl add lime juice, salt, onion, chillies and
curry leaves. Crush everything using finger tips, crush until onion gets soft. (Crushing
chillies using fingers may cause burning sensation so wear a glove).
2_ In another bowl fluff canned tuna, into this add coconut
mix very well, then add lettuce and mix everything.
3_ Into lettuce mixture add crushed onion mixture and mix to
combine. Taste and adjust salt …… enjoy!

Kankun Beef
Kankun or morning glory (Ipomoea aquatica) also known as
water spinach and water convolvulus or swamp cabbage is a popular greens in
East and Southeast Asia. This leafy green consider as poor's man dish since
it's very cheap and available widely in East and Southeast Asia.
I think kankun was
introduced to Maldives may be since 10 years. Now it’s available at the market,
stores and local shops. A bunch weighing around hundred grams will cost around Eight
Maldivian Rufiya. The leaves and tender tops are often stir-fried with some kind
of sauce and meat or dried tuna. Kankun dishes are so easy and fast to prepare, as well it’s
very healthy. Today I made kakun beef, just love the taste. I love this dish
with rice and dall curry.
Ingredients:
200 grams kankun leaves (Pick cleaned and washed)
250 grams tenderloin beef, thinly sliced
1 big onion sliced
2 cloves garlic sliced
4 dry chilies (each cut in to 3 )
2 tbs dark soy sauce
1 tbs Oyster sauce
½ tsp pepper powder
4 tbs vegetable oil
¾ tsp salt
Method:
1_ In a bowl add beef 1 table spoon soy sauce, oyster sauce
and pepper powder, leave to marinate for 30 minutes.
2_ In a very hot wok or a pan add oil, onion, dry chilly and garlic, sauté
until onion gets soft. In to this add marinated beef and sauté for 5 minutes,
you can see beef getting cooked. Lower heat of stove to very low and cover beef
mixture with lid. Cook covered until beef is tender, this will take 20 to 30
minutes.
3_ when beef is tender tip all kankun leaves, remaining soy
sauce and salt stir fry for few minutes and remove from heat……………………. Enjoy!

Meeru kuri Boashi (Banana flower salad)
Four days before I got a big gift box, ya you read correct a gift box from a friend living at one of the island. This is common to every home of Male', relatives, friends who live at the islands used to send some kind of vegetables/fruits or different kinds of sweets & savory snacks as much they can when the boats which travel between the island and capital Male' comes to Male'. Below is a pic of gift box I got and I have marked the names of fruits and vegetables I got but the fruit "Kulhava" I have no idea what the English name is. So the first vegetable I cooked is Banana flower ( Boashi)
Boashi or Banana flower is used as a vegetable in Asian cuisine. In Maldives Boashi or Banana flower is used to make a cooked salad which we eat with rice. The name of Banana flower is Boashi in Maldivian language but when it is cooked as a salad also the same name is given Boashi, so I am giving a new name to this salad called "Meeru kuri Boashi". This salad is made cooking banana flower with some common ingredients. This salad can be eaten with Maldivian flat bread too.
Banana flower or Boashi
Ingredients:
1Banana flower or Boashi ( large or medium)
2big onions (sliced)
3garlic cloves (chopped)
2spring curry leaves
5piece 3inch pandan leaves
5dry chillies (each cut in to three)
100g dry tuna chips (hikimas)
1/3cup vegetable oil
salt
1big bowl of salt water (In about 1ltr of water you can dissolve 3tbs of salt)
Method:
First clean the Banana flower by removing the first three to four petals and the small flowers grown around it.
Then wash nicely and cut or slice the Banana flower or Boashi as thinly as you can in to the salt water.

Set aside for about 15minutes( While you are cutting the Banana flower wear gloves as the banana flower releases sticky milk, the salt water helps stop the cut out banana flowers changing in to dark color and the stickiness also will reduce). In a big saucepan heat oil, add onion, garlic, curry leaves and pandan leaves, saute until onions are soft.
Drain Banana flowers, you can throw the water now their is no need of it. Add dry chillies & Banana flowers in to the soften onion mixture, stir well to mix.
Cover & cook until Banana flowers are soft. Add dry tuna chips mix (Some people put some aji-no-moto also but I don't like to put aji-no-moto in my foods if you like you can add) and again put the lid on and cook for about another five minutes stirring in between, you may have to season with salt or you may not just taste & decide ..............enjoy

Cooked Beet & Tomato Salad
Ingredients:
400g Beetroot
250g Tomato
1big Onion (sliced)
5tbs Olive Oil
Pinch of salt
1/2tsp Pepper Powder
Method:
Cut beetroot and tomato in to bite size pieces.
Heat olive oil in a saucepan, add onion saute until transparent. Take onion into a plate or a bowl set aside, in the same sauce pan add beetroot stir with the olive oil to coat well. Cover and cook until medium soft, now mix the tomatoes and soften onion with beetroot. Cover again cook until soft, add pepper powder season with salt. Mix well and serve with rice or bread........................................enjoy!

Copyfathu Mashuni (Kale and tuna salad)
Copyfai is a flat big leaf eaten raw with rice or used in making salads. I am not sure, but I think Copyfai is a kind of kale leaf. Mostly it looks like Brazilian kale. Here I am posting kale and tuna salad which we eat with our flat bread called "Roshi".
Ingredients:
2big Copyfai (kale leaf) cut in to strip
1can (180g) tuna
1big onion (sliced)
1big onion (sliced)
1/2cup grated coconut
Fresh chilly (as much you like)
1big lime juice
1tbs salt
Method:
Crush onion, chilly in lime juice and salt. Add coconut, tuna mix well then mix copyfai (Kale leaf).

1000 island dressing mix vegetable salad
Ingredients:
For thousand island dressing:
1C mayonnaise
1tsp cream
2tsp chilly sauce
2tsp chopped sweet pickle
1/4tsp dried chilly powder
1tsp minced onion
1hard boiled egg (chopped)
2tsp chopped olives
For salad:
3 to 4 types of vegetables of your choice (sliced or chopped)
Method:
Combine all the dressing ingredients well. This salad dressing makes 11/2cups. Mix with your choice of vegetables............................enjoy

Gabulhi Majaa with Carrot (Medium young Coconut Salad with carrot)
Ingredients
500g grated Gabulhi (medium young coconut)
400g grated carrot
200g smoked tuna (sliced & crushed)
1big Maldivian chilly
1big Onion (chopped)
4tsp lime juice
Salt
Method:
Crush onion, chilly, lime and salt. Mix Coconut, smoked tuna, carrot. Serve with Roshi (Maldivian flat bread) ....................enjoy.

Carrot & Cabbage Salad
This salad is very special for me because it's my kids favorite. If you like you can add 1 cup of grated pineapple or a sweet apple instead of sugar then this salad will be called Japanese salad .....No idea why.
Ingredients:
2 cups grated Carrot
3 cups grated Cabbage
Small red Onion ( chopped )
4 tbs Mayonnaise
½ tsp Black Peppercorns (powder)
2 tsp sugar
½ tsp salt
Method
Mix all ingredients ..............................how easy is that ..............enjoy.
