Tandoori Chicken Pizza


Two days back my friend Shaz  (The girl who calls me most regarding my recipes and other recipes) called me and asked how I make Tandoori pizza. I told her soon I will post it on my blog, so Shaz here it is.

Pizza Dough Ingredients:
21/2 cups all-purpose flour, extra for dusting
1 cup warm water
1 tbsp sugar
1/2 tsp salt
1 tsp yeast
1/3 cup vegetable oil
Method:
In a tall glass add sugar, mix ½ cup warm water and sprinkle the yeast and let the yeast to foam and bubble about 15minutes. In a large bowl, mix 21/2 cups flour and salt.  Add the oil and rub the oil in to the flour. Add the yeast mixture & the remaining 1/2 cup of warm water. Mix the dough. Put the dough on a clean work space  Knead the dough, continue kneading for approx 5 minutes. Knead until dough is smooth. Lightly oil your bowl, oil the dough in the bowl. Turn it over, pat it down. Cover with plastic and keep in a warm place to double the size or 1 hour.

Pizza filling
Ingredients A (pizza sauce)
Small onion (chopped)
2 cloves garlic grated
Chilly (githeyo mirus)
½ cup pizza sauce
1/3 cup tomato sauce
1tbs tandoori masala powder
2tbs olive oil or vegetable oil
Ingredients B (Tandoori chicken marinate)
1 chicken breast (sliced in to thin strips)
3 tbs tandoori masala
1tbs garam masala
1tsp garlic & ginger paste
1/2tsp salt
1 lime juice
Few drops of red food color (I used wilton red)
Ingredients C
½ cup sliced mushroom
2 tomatoes, sliced
Tandoori chicken (Ingredient B)
Mozzarella cheese
Method:
Mix all the ingredients in B and leave over night or 3 hours to marinate in the fridge. In a baking pan arrange the marinated chicken pieces and bake at 190C oven until chicken is cooked about 45 minutes.
Make sauce:- (ingredients C ) In a sauce pan heat oil, add onion, garlic and chilly sauté until onions are slightly brown. Into this add tomato sauce, pizza sauce and tandoori masala. Cook for two minutes and season with salt. Set aside.
To make the Pizza.. take half of the dough and roll out in to a very thin base (when baking it will puff), bake in  a 170C oven until back of the pizza base gets slightly brown, now flip the pizza base upside down, spread a generous amount of pizza sauce, arrange vegetables, sprinkle the tandoori chicken pieces evenly, on this shave mozzarella cheese a lot.

Bake in oven until cheese is melted and the sides of pizza get slightly brown. Serve Hot............................... Enjoy!

Note: Just use your favorite vegetables and below is a pic of pizza sauce & tandoori masala I used in this recipe. I bought the pizza sauce from a nearby local shop and tandoori masala from Lily F & B but I think it's available at other store's too.

Tuna Pan Loaf Pizza

I made this in my cooking class using a chicken version and it tasted so yummy, the taste of egg toast gives the loaf an extra deliciousness, so I thought I will give a try using a tuna pizza filling. I made this for the third day iftar and my son loved it.
Ingredients: A
1 can tuna (I used in oil)
1 medium onion (chopped)
Chilly (githeyomirus)
1 spring curry leaves
2 garlic (crushed & chopped)
Salt
5 tbs vegetable oil
Ingredients: B
For the sauce
1/3 cup Chilly & garlic sauce
1/3 cup tomato sauce
Or
You can use your favorite pizza sauce
Ingredients: C
10 eggs
½ of a medium onion chopped
1/2 tsp pepper powder
Salt
Ingredient: D
10 to 12 slice of Bread (upper hard layer removed)
3 tbs vegetable oil
3 slices of slice cheese
Mozzarella cheese (optional as much you like)
And
You will need about 81/2 inch pan with a lid

Method:

In sauce pan heat 5 tbs oil, fry onion, chilly, garlic and curry leaves until onions are soft. Into this add tuna and salt, cook for 2 minutes stirring constantly. Add the sauce and mix for another 2 minutes. Set aside.

In a bowl mix all ingredients C and set aside. Oil the pan generously and dip both sides of each slice of bread into the egg mixture coat well and arrange bread slices in the pan covering the entire bottom & sides. To cover small areas just tier the bread in to small pieces and dip in egg mixture. 

When the entire pan is covered with egg dipped bread slices pour the tuna mixture and spread evenly. Arrange the cheese slices both, slice cheese & mozzarella cheese.
(You can grate the cheese for an even layer, I am too lazy to do that
Again cover the tuna & cheese mixture by layering bread slices dipped in egg mixture covering totally, pour rest of the remaining egg mixture on top of the pan loaf.

Put the lid on and on the lowest heat of your stove cook the pan loaf pizza until the bottom is slightly brown & toasted, it will take about 5 to 10 minutes.

Keep on checking as the loaf may burn easily. Now take the lid off & flip the bottom of the pan loaf on the inside of the lid, again flip the pan loaf pizza upside down into the pan and now don't put the lid on, just bake until the bottom is nicely brown. When the bottom of pan loaf gets brown you can smell bread toasting. This is how I know my pan loaf pizza side is done. When both sides are baked slice & serve with a salad ........ enjoy!

My Crispy Crunchy all favorite stuffed Pizza…

To make a crispy pizza all I need is a thin pizza base, I don't have the mood to make one so I went to the shop in front of my home, bought one pizza base. The pizza bases available in the local shops are thicker than it should be for a pizza, so what I did is I divided the base in half to get a very thin two half's. The thinner the base the crispier the pizza will get.

My kid's love sausages, chicken, mushrooms, tomatoes & lots of cheese so I stuffed this pizza with all their favorite ingredients. 

Ingredients: A
1pizza Base
8tbs chilly & garlic sauce
4tbs tomato sauce
Ingredients: B
1/2cup vegetable oil or olive oil
300grms chicken (cut in to 1cm pieces)
1big Onion (chopped)
2tsp red pepper flakes (Raalhuko muguraafa huri hikimirus)
5 sausages (any kind you like sliced)
Salt
Ingredient: C
2 big Tomatoes (sliced)
1cup of sliced or chopped mushrooms
8slice cheese
Mozzarella cheese

Method:
Cut the pizza base in half. Keep your left hand on top of the pizza base, holding your knife with the right move the knife in a zig zag way.  I recommend that you cut the base a few inches, spin 30 degrees and cut a few inches and repeat until you are all the way through it. Put the two half’s cut side up on a baking pan. Set aside.


Heat the oil in a wok or a sauce pan add the chicken pieces and 1/2tsp of salt, stir fry until chicken pieces are cooked & inside is no more pink. Take from oil on to a kitchen towel leave to drain oil. In the same wok add onion, pepper flakes, sausages and 1/3tsp salt. Stir fry until sausages are puffed. Start heating the oven at 150C,

To layer the pizza:- Spread 4tbs of chilly & garlic sauce & 2tbs tomato sauce on top of each base, divide the sausage mixture equally on top, on this sprinkle the fried chicken pieces equally, do the same with the mushrooms, on top of this arrange the tomatoes and last just pull, tier and arrange lots & lots of slice cheese & mozzarella.

Pop the tray into the oven & bake until the cheese is melted & the base gets nicely crisp. This may take 20 to 30 minutes, just keep on checking don’t let the base burn……..enjoy!

Sausage and mushroom calzones



Ingredients:
1batch Pizza dough
For calzone filling:
5sausages (sliced)
200g mushrooms
1big onion (chopped)
Chilly
3tsp olive oil or vegetable oil
1cup mozzarella cheese (grated)
1/2cup cheddar cheese (grated)
1/2tsp salt
Olive oil for brushing
For sauce
1cup tomato sauce
2tbs Parmesan cheese
1/2 tsp dried oregano
1/2 tsp onion paste
1/2 tsp garlic paste
1/4 tsp salt
1/4 tsp sugar 

Method:
In a sauce pan add onion, sausage, chilly and mushrooms. Sauté until sausages puff little bit. Take out from flame and let it cool completely.

Add 2cheeses and salt combine well. 

Divide the pizza dough in to TT ball size balls.

At this point heat the oven to 260C. Lightly flour a rolling board or surface. Roll one ball of pizza dough into a circle or an oval shape. Put a tablespoon of filling in one half than fold the other half.


Seal the sides pressing a fork. Lightly flour a baking tray and arrange all the finished calzones and rub with olive oil.

Pizza Dough



Ingredients:
21/2cup flour and more flour for kneading
1/2cup warm water (110 degrees)
11/2tsp yeast
2tsp extra-virgin olive oil
1tsp salt
3/4cup water at room temperature 

Method:
In the 1/2cup warm water sprinkle yeast. Let it sit for 10minuts. Add the 3/4cup water and oil stir.
In a bowl mix flour and salt. Make a well in the centre pour the liquid and combine with a wooden spoon. When all the flour is combined turn the dough on a lightly floured working surface. Knead the dough for 10 minutes. Oil a bowl and put the dough in bowl cover with food plastic wrap and let it rise until double in size about 1to 11/2hour. Punch it down and use the dough.

Bread slice pizza





Ingredients
6slices of bread
6slices of slice cheese
1can tuna
1medium onion (chopped)
1medium tomato (chopped)
Maldivian chilly (chopped)
4 mushrooms (chopped)
1/2cup chilli & garlic sauce
1/3cup tomato sauce
Salt
3tsp vegetable oil 

Method:
Cut the upper hard crust of bread slice. Roll the bread slices until very thin. Arrange on a baking tray. 



In a sauce pan fry onion, chilly, mushroom and tomato until soft mix the can tuna and both sauces. Season with salt 

Davide the pizza filling in to 6 equal parts. Spread on each bread slice evenly .


Put a cheese slice on each bread slice 

Bake in a 170C preheated Oven for 10 minutes......................................enjoy
