Maldivian Tuna kebab with Coleslaw Sandwich

A sandwich is defined as two or more slices of bread with one or more fillings and there are just so many possibilities! In essence this fresh tuna kebab sandwich is just a simple minced tuna mixed with some spices and formed into small balls or egg shape kebabs, grilled on little oil until nice and golden brown ,crispy and then thrown into a sandwich along with a tasty coleslaw. Does this sound simple then the ingredient list? I finished the sandwiches off with some tomato sauce.

Ingredients:
200grms fresh tuna (minced)
3 tbs vegetable oil
6 slice of bread
2 slice of slice cheese
4 Wooden skewers
6 tbs Tomato sauce

For curry paste
5 dry Chilies
1 tsp cumin
1 tsp whole pepper
1/2 inch ginger
2 cloves of garlic
6 curry leafs
1 small onion
1 tsp smoked paprika
2 tbs water
1/3 tsp salt

For simple coleslaw salad
½ cup chopped or shredded cabbage
½ cup grated carrot
3 tbs mayonnaise
1/2 tsp pepper powder
Pinch of salt

Method:
1 _ Grind all curry paste ingredients in to a very fine paste.
2 _ Mix curry paste, minced tuna & ¾ teaspoon salt, Marinate the meat with curry paste mixture for 2 hours. Take about a tennis-ball size of tuna mince and shape evenly onto the bamboo skewers or make small balls and thread to skewer, 1/4 of the skewer should be left empty so it can be handled with ease and grill for 20 to 30 minutes. Turning side by side until cooked.
Here are some cooking options for kebab:
   * Place some oil on the grill and then grill 10 minutes on each side.
   * Broil on a broiler safe dish that has been coated with aluminum foil and oil on high for 15     minutes on each side.
   * Bake in the oven in an oven safe container that has been oiled at 350 degrees F for 30 minutes on each side.

3 _ Make coleslaw mixing all salad ingredients, set aside.

Lets make Sandwich
4_ Toast all the bread slices on a flat pan, you can toast in a toaster too, but I want the slice cheese to melt on one slice that’s why I toasted on a flat pan. Toast one side turn upside down and put cheese slices on top of the toasted side of two bread slices as I am making two sandwiches, toast like this until cheese is melted.
5 _ Take one toasted bread slice on a plate, take the bread slice topped with cheese and sandwich both. Now on the sandwiched bread spread half of the coleslaw, remove fish kebabs from skewer and arrange on top of coleslaw, drop some spoon full of tomato sauce on the kebabs and sandwich with the third slice, to secure sandwich prick a toothpick. Make the next sandwich and cut each sandwich in to two and serve with French fries …… enjoy!

Chicken Shawarma with the touch of Sweet Hungarian ..



Did you know Shawarma is called a meat preparation in Arabic, and the bread used is called Taboon bread. Shawarma also refers to rolled sandwiches and wraps. Shawarma is made by alternately stacking strips of seasoned flat meat (beef, lamb or marinated chicken) on a stick. An onion, a tomato, or a halved lemon is sometimes placed at the top of the stack for additional flavoring. The meat is roasted slowly on all sides as the spit rotates in front of, or over, a flame for hours(Information taken from Shawarma).

First I saw meet roasted this way in India, and two to three months before in a small restaurant at Majeedee magu near artificial beach. Shawarma wraps are getting very popular now a days. Why not try this delicious Sahwarma recipe at home.

I know I know some of my recipes have such a big ingredient list, let me tell you if you want yummy foods must add all needed ingredients to get that perfect taste. Just buy one bottle each and it can be used so many times, always check the expiry date because some shops sells goods which will have one or less month expiry. This happened to me, I bought some highly expensive spice & dried herb bottles without checking expiry date the bottles expiry were due to end of that month. What a waste.

Ingredients:
Chicken Marinate
500 grams boneless chicken (cut into bite size cubes)
1 tbs Tomato paste
2 cloves Garlic paste
1 tbs Mustard
11/2 tbs Soy Sauce
1 tbs Dried Oregano
1 tsp Paprika
1 tbs Roasted Curry Powder
2 tbs Vegetable oil
3/4 tsp Salt
Vegetable salad
½ of a medium size cucumber (sliced)
2 tomatoes sliced
1 cup shredded cabbage or lettuce
Small onion ( chopped)
Scotch bonnet Chile ( githeyo mirus) as much you like
1 tbs lime juice
Salt
To cook chicken
1 big onion sliced
1 garlic clove chopped
Scotch bonnet Chile ( githeyo mirus) as much you like
1/3 cup vegetable oil (reduce if you want)
To make Shawarma roll
3 Flat Pitta Breads
½ cup garlic sauce or mayonnaise (both will be great)
3 slice cheese

Method:
Mix all the marinate ingredients, cover with plastic wrap and leave over night or at least for 3 hours. In a sauce pan heat as much oil you want from 1/3 cup of vegetable oil. Add sliced onions, garlic and Scotch bonnet chile, and saute until onions get soft. Into this add marinated chicken and cook on medium heat stirring in between until chicken is cooked and no water is left. Set aside. Make salad combining all the salad ingredients. Set aside.

To assemble Shawarma :
Take pitta bread, apply your choice of sauce or mayonnaise, on this in the middle put one third of chicken mixture than salad. On salad divide slice cheese in to three portions and arrange on top. Roll both sides of pita to the middle and secure with a toothpick. Serve with french fries. ... Enjoy!

Note: For a more healthier version skewer the marinated chicken and grill as a kebab. All the dried herbs & spices used in this recipe I bought from Fantasy Store.

Chicken Submarine



It's been a week since I am having right shoulder pain. When I become too busy with cakes & in the kitchen this happens, so my sweet daughter took in charge of the kitchen for the last few days so that I could get some rest. She made this yummy corn beef sub sandwiches yesterday for breaking the fast, but I forgot to take picture of those sandwiches, soon I will make her version of corn beef sub sandwiches & will post the recipe. Today I feel better so I decided that today also we must have submarine. I prepared this amazing chicken submarine, I have used few vegetables, which is easily available from the nearby shops, but it can be replaced with any kind of vegetable you want.

Ingredients: A
4 Submarine buns
Ingredients: B
1/3cup vegetable oil
450grms boneless chicken (cooked in salted water & cut in to small cubes)
2medium onions
2garlic bulbs (chopped)
2 Capsicum (seeds removed and cut in to stripes)
½ tsp chopped Chilly (Githeyomirus)
Ingredients: C
2tbs cream cheese spread
1/2cup Mayonnaise
2tbs chilly & garlic sauce
1/2tsp pepper powder
salt
Ingredients: D
4 cheese slices (each cut in to 4squares)
3Big fresh Tomatoes (sliced)
2big lettuce leaves (cut in to half)

Method:
Into a sauce pan put all the ingredients in B, saute until chicken pieces get a light brown color. Take out from heat let cool for 5minutes, then add all ingredients in C, Mix well season with salt. Set aside. At this point start heating the oven at 160C.
To layer the sandwich: Cut each submarine bun in half length wise. On the bottom half spread 1/4portion of the creamy chicken mixture then arrange 4 small squares of slice cheese, on top of this layer one lettuce half, then arrange 5 tomato slices and cover with the top half. Make four submarine sandwiches the same way and cut each sandwich in half, insert or prick a toothpick in the center of each half and arrange the submarine sandwiches in a big baking pan.
 Bake for 5minutes or until cheese is melted, serve with french-fries and a salad......enjoy!
