Kukulhu Hiki Riha (Thick Chicken Curry)


800grms boneless chicken (cut in to cubes)
2 medium onions cut in to lengthwise
½ of one Maldivian chilly
10 curry leaves
4 Pandan leaves each 2 inch
4 garlic bulbs cut in to small pieces
1 inch ginger
3 table spoon chicken curry powder
2 cups thick coconut milk
1 big Tomato (Pureed in a food processor or blender)
¼ cup vegetable oil
Majaa Havaadu or Majaa curry powder (My creation):-
1 Table spoon cumin
1 Table spoon coriander
10 peppercorns
4 dried chillies
1 inch cinnamon
2 cloves
½ tablespoon musterd seeds

Powder whole spices of Majaa havaadu
Start heating oil in a pan add onions, curry leaves, Pandan leaves & Maldivian chilly fry until the onions get soft. Now add the chicken stir fry with the onions until the chickens turn to light brown.
Add Chicken curry powder, Majaa curry powder & Tomato puree mix well. Pour Coconut milk Cook for 10 minutes season with salt.............enjoy
