Pandan chicken is a Thai kind of cooking chicken. It's not spicy just the sweet taste of padan, soy and oyster sauce. Great to eat dipped in chilly sauce or tomato sauce. Kids loved it. This was first time I made pandan chicken. After tasting it a new idea came, how about roasting chicken pieces marinated in musanmaa curry paste and wrap with pandan leaf. So I am going to try soon this version of chicken which we can enjoy with rice or roshi.
Ingredients:
2chicken breasts (cleaned and diced)
20pandan leaf strip (8inch each)
Seasoning:
2tbs soy sauce
Seasoning:

1tbs oyster sauce
1/2tsp ginger, garlic paste
1tbs chilly powder
1/2tsp pepper powder
1/2tsp salt
1/2tsp sugar
Method:
Marinate diced chicken meat with seasoning for 1hours. Wrap each chicken meat neatly with pandan leaves. Secure with a toothpick.
Arrange the pandan chicken pieces on a baking tray lined with aluminum foil and bake at 170C pre heated oven until chicken is cooked or deep fry until golden brown. Serve with sauce ...enjoy
