Any food colour you like as much you want
For sugar syrup:
2 cups sugar
1cup water
3 cardamom pods
2inch cinnamon
3tsp rose water

1 zip bag
Oil for frying

To make sugar syrup: In a sauce pan add sugar, water, cardamom pods, cinnamon cook 15 minutes. Add rose water set aside.
To make batter: Mix flour, baking powder, baking soda and food color, vanilla essence. Add water mix to make a batter which falls smoothly.

How to fry and shape zileybi: Heat oil to 350f, Take the zip bag put half of the bag into a glass & fold out the upper half of zip bag (This will make it easy to pour the batter inside the bag) pour the batter, take the bag out twist from upper end to protect the batter squeezing out from bag or you can tie it with a rubber band.

Cut a small hole from one corner of the zip bag. Squeeze the batter in to hot oil making swirls.

Fry both sides until crispy (when you press with a spoon you will feel the zileybi had hardened) take from oil immediately dip in sugar syrup coat well and serve ......................................enjoy.
