Tuna kothu roshi


Kothu roshi is a famous dish eaten at Male'. Some people say this dish is originally from Sri Lanka, but it is made in different countries of Asia in different ways.I have used canned tuna to make this dish but cooked chicken, beef & sausages can be added and any variety of vegetables which you like you can use.

Ingredients:
3 cups of roshi shredded or cut in to bite size
1can tuna (oil drained)
2 carrots (cut in to cubes)
1cup shredded cabbage
1/2 cup sliced mushrooms
1 big onion (sliced)
6 curry leaves
3piece 2inch pandan leaves
3 eggs (slightly beaten)
1 tsp chopped ginger
1 tsp chopped garlic 
1 tsp of chillie powder  or lonumirus curry powder
3tsp of chicken curry powder
2tsp tomato paste
salt 
1-2 green chillies, chopped
5tbs vegetable oil


Method:
Heat the oil in a pan under low flame. Add ginger, garlic, onion, carrot, cabbage, chillies, pandan leaves, curry leaves and mashrooms fry until vegetables are cooked.

Next add the tuna, tomato paste and both curry powders stir to combine, season with salt Now add some oil to another pan, add the beaten eggs and stir fry  mix with the roshi, then mix roshi mixture in to the vegetables. Serve hot...........................................enjoy!

My sons easy, fast & supper delicious Noodles


My son eats noodles only this way, he told me one day to cook him noodles like this after that me & my daughter also likes to eat noodles this way. So easy, so fast & supper delicious.

Ingredients:
1pkt Noodles (mamee brand)
3tbs mas fai
2tbs tomato paste
1can tuna chunks in oil (drain oil before putting in noodles)
11/2cup water
1/2cup drumstick leaves

Method:
Put all ingredients other then drumstick leaves into a saucepan.

Empty soup packet in the noodle's packet into the sauce pan too, stir and cook until noodles are soft but not mashed about 10minutes or less.

Put noodles into a serving plate & scatter handful of drumstick leaves on top .......enjoy.

Hiki mahu masroshi

Masroshi is a snack or shorteat eaten  for evening tea or breakfast. Traditional masroshi is made using smoked tuna and coconut dough, but I have used oil dough & dried tuna  to make masroshi it tasted yummy.
Ingredients:

 Coconut flat bread dough or oil flat bread dough
150g chipped hikimas (dried & chipped tuna)
1/2cup scrapped coconut
1tbs masmirus or chilly
1medium onion ( thinly sliced)
3curry leaves (chopped)
pinch of pepper powder
1/2tsp turmeric powder
1lemon juice
1/2tsp salt

Method:
Crush onion, masmirus or chilly and curry leaves with lime juice and salt. Add turmeric and pepper powder mix well, than add coconut & dried tuna mix to combine everything.
 Divide the flour dough which you have chosen to eight portions. If you are using oil dough you have to make double of what I have written for roshi and coconut dough will be enough what I have written. 
Take one portion of dough flat it little bit in your palms making a well inside folding your palm half way, with a spoon scoop one portion of fish mixture into the dough and press inside.
now seal the dough covering the fish inside, smooth little bit. continue covering all the fish portions.
Heat a flat pan on stove. On your kitchen counter or Chapati roller put some extra flour and roll each dough in to about 4inch diameter disks. 

 Bake both sides of masroshi until brown..................................................................................enjoy!

Gerikiru Boakiba with Gerikiru Cream (Condensed Milk Cake with Condensed Milk Cream)


Hello everyone since I came from holidays I have been very busy with cake orders, today I got some time so I decided to bake a yummy condensed milk cake. This recipe was given to me by one of my cousin. She told me to add half laahi flour.  Laahi is an empty condensed milk can used to measure ingredients, just like a cup. I did not have a laahi so I thought 3/4cup of flour will be fine. But when I baked the cake adding 3/4 cup of flour the cake came out dryer then it should be but still yummy. This did not satisfy me, so I decided again to bake this cake. This time I used 1/2cup of flour in this cake and cake came out great, little sticky and soft, this time I baked condensed milk cake in a rectangular tray because I want make small cute cakes layering with condensed milk cream and I melted some sugar to caramelize it and sprinkled the caramel on the cute cakes. If you want you can avoid sprinkling the caramel sugar. Below is the delicious recipe. 

Ingredients for cake :
1can condensed milk
1/2c flour
1tbs sugar
1tbs margarine
1tsp vanilla essence
1tsp baking powder
6 large eggs

 Ingredients for condensed milk cream
1 cup heavy cream
3tbs condensed milk

Method:

To make Condensed milk cream: Beat heavy cream until stiff peaks and fold condensed milk in to the whipped cream. Keep in fridge until use.


To make cake: Preheat oven to 140C, line an 8 to 10inch tray with parchment or just apply some butter or margarine all inside the tray and sprinkle about 1tbs of flour coating all sides well set aside. In a bowl add all ingredients other then flour and baking powder beat until well combined.


Now sift flour and baking powder in to the bowl and beat well. This mixture will be very runny, pour mixture in to the baking tray. 

Bake for about 20 to 30 minutes until when a toothpick inserted in the center comes out with few crumbs or clean.


Let the cake cool completely transfer cake to your serving plate and apply generous amount of condensed milk cream and serve.........enjoy!
