Ingredients:
1 vanilla cake or lady finger biscuit pkt
3 eggs (separated)
8oz Mascarpone cheese or cream cheese
1/2cup wiping cream (whipped)
8tbs sugar
11/2cup cooled espresso or strong coffee
3tbs cocoa
2tbs icing sugar
Method:
If you are using a vanilla cake made with cake mix cut the cake to four equal layers. For tiramisu two layers will be enough. In a bowl beat egg yolks and 3tbs sugar until pale yellow. In another bowl beat egg whites and 3tbs sugar until soft peaks. In another bowl beat mascarpone cheese or cream cheese with 2tbs of sugar until creamy. Fold egg yolk mixture in to egg whites, then fold egg mixture in to cheese carefully, again fold whipped cream in to cheese and egg mixture.
