All Purpose Meatball Sauce

This delicious meat ball sauce can be used in pastas, lasagna, noodles, thicken the sauce and use it to make sliders, mini meat ball buns and also to make submarines. The choices are endless. YUM!
( I recently used this sauce to make meat ball hotdog buns)
Ingredients:
Meatballs:-
250 grms tenderloin beef
1/4 c bread crumbs
1/2 tsp pepper
2 Tbsp fried onion
1 egg lightly beaten
2 Tbsp freshly grated Parmesan cheese
1/2 tsp Italian herbs
1-2 cloves garlic, minced
 salt
Sauce
1 small onion, chopped
chilly
1 clove garlic, minced or pressed
½ can crushed tomatoes
1 capsicum (diced)
½ cup tomato sauce
1 tsp. oregano
2 tsp. Italian herbs
Salt and pepper to taste
oil
Pinch of baking soda (to help neutralize the acid)

Method:
To make Meatballs:-
In a mixer grind all meatball ingredients. Make small balls and fry or bake until cooked.
To make Sauce:-
Heat olive oil in a sauce pan. Add onion and garlic and cook until onions are translucent and garlic is fragrant. Add remaining sauce ingredients and combine well. Bring to a simmer and add meatballs. Simmer on low, uncovered, until desired consistency is reached--about 25-30 minutes for a sauce that's of medium consistency. If sauce is too thick add some chicken stock to thin it.
