( I recently used this sauce to make meat ball hotdog buns)
Ingredients:
Meatballs:-
250 grms tenderloin beef
1/4 c bread crumbs
1/2 tsp pepper
2 Tbsp fried onion
1 egg lightly beaten
2 Tbsp freshly grated Parmesan cheese
1/2 tsp Italian herbs
1-2 cloves garlic, minced
salt
Sauce
1 small onion, chopped
chilly
1 clove garlic, minced or pressed
½ can crushed tomatoes
1 capsicum (diced)
½ cup tomato sauce
1 tsp. oregano
2 tsp. Italian herbs
Salt and pepper to taste
oil
Pinch of baking soda (to help neutralize the acid)
Method:
To make Meatballs:-
In a mixer grind all meatball ingredients. Make small balls
and fry or bake until cooked.
To make Sauce:-
Heat olive oil in a sauce pan. Add onion and garlic and cook
until onions are translucent and garlic is fragrant. Add remaining sauce
ingredients and combine well. Bring to a simmer and add meatballs. Simmer on
low, uncovered, until desired consistency is reached--about 25-30 minutes for a
sauce that's of medium consistency. If sauce is too thick add some chicken stock
to thin it.
