Rainbow Cake


I use to make rainbow cupcakes with butter cream frosting lot. My kid's love it. It's so colorful and very cute. I have used a recipe that calls for oil instead of butter or margarine so that all the colors used in this recipe will be vibrant. The cake does not get too brown when you bake it. The batter is thin which makes the cake moist and not too sweet so that you can put any kind of frosting you like. But today instead of cupcakes I baked a normal cake. I did not put any icing on this cake, but if you like you can frost with any kind of icing you like. This cake is great for kid's parties or you can even bake it with your kids it's just so much fun and yummy! 




Ingredients:
1cup all purpose flour
11/2 tsp baking powder
1/4 tsp salt
1/2 cup sugar
2large eggs
1/2 cup vegetable oil
1/2 cup buttermilk
1tsp vanilla extract
red, yellow, green, orange and blue food colorings

Method:
Preheat oven to 350F. Grease 8inch baking pan. In a medium bowl, whisk together flour, baking powder and salt. In a large bowl, whisk together sugar, eggs, vegetable oil, buttermilk and vanilla extract. Pour in dry ingredients and stir until just combined. Divide batter evenly into 5small bowls; each should have a little more than 1/3 cup batter (approx 6tbsp or so for each). Add about 1/2 tsp food coloring to each bowl to make red, orange, yellow, green and blue batters. Stir well, so no streaks of plain batter remain.



Add additional food coloring if necessary. Starting with the orange batter, Repeat with all remaining colors, working from green to yellow to orange to red, adding each on top of the previous color. Do not attempt to spread the layers of color out (as it can cause layers to combined), but allow them to spread on their own.




Bake for about 15 minutes, until a toothpick inserted into the center comes out clean.
Cool cake on a wire rack before frosting.......................enjoy
