Tuna kothu roshi


Kothu roshi is a famous dish eaten at Male'. Some people say this dish is originally from Sri Lanka, but it is made in different countries of Asia in different ways.I have used canned tuna to make this dish but cooked chicken, beef & sausages can be added and any variety of vegetables which you like you can use.

Ingredients:
3 cups of roshi shredded or cut in to bite size
1can tuna (oil drained)
2 carrots (cut in to cubes)
1cup shredded cabbage
1/2 cup sliced mushrooms
1 big onion (sliced)
6 curry leaves
3piece 2inch pandan leaves
3 eggs (slightly beaten)
1 tsp chopped ginger
1 tsp chopped garlic 
1 tsp of chillie powder  or lonumirus curry powder
3tsp of chicken curry powder
2tsp tomato paste
salt 
1-2 green chillies, chopped
5tbs vegetable oil


Method:
Heat the oil in a pan under low flame. Add ginger, garlic, onion, carrot, cabbage, chillies, pandan leaves, curry leaves and mashrooms fry until vegetables are cooked.

Next add the tuna, tomato paste and both curry powders stir to combine, season with salt Now add some oil to another pan, add the beaten eggs and stir fry  mix with the roshi, then mix roshi mixture in to the vegetables. Serve hot...........................................enjoy!
